Fast and Easy Food Prep

I love eating healthy and being organized but it’s not something that comes easily to our household. My schedule is usually very full, chaotic and, I admit, I forget to eat or lay out meat for dinner and with our recent move, there’s been moments when I don’t even have the simplest of ingredients to complete a meal.

So I’d like to share with you one of my favorite Pinterest posts, 5 recipes in fact, that will help you knock out dinner this week, take the stress off of meal times and maybe even leave you some leftovers for lunch the next day!

5 Slow Cooker Freezer Bag Meals courtesy of Hip2Save!

These meals are favorites in my house! Now I will say that I don’t make the Creamy Italian Chicken but here is the link for the Crockpot Sweet and Sour Sausage that I use in its place.

So, let me give you a rundown on my favorite of the 5 and how I throw them together in under an hour:

First up I want to point out that Hip2Save has included a Master Shopping List for your convenience that you can print off and take with you. I didn’t use this simply because, honestly, I’ve made these so many times, I know exactly what I already have and need to buy. Look through the list though, you’ll notice none of the ingredients are exotic or hard to find. My local Kroger had everything I needed.

Don’t let the simple recipes fool you though. These recipes will have your friends asking where you learned to cook an your kids begging for seconds! In fact, my friends thinks I’m a Michelin star Chef because I whipped up the fresh version of Cilantro Lime Chicken one night. Don’t tell them how easy it really is! Gotta keep a little mystery…

Speaking of Cilantro Lime Chicken, my most favorite of the 5 dishes, I cook this one pretty frequently and I tweak it a little every time I make it, another beautiful aspect of these recipes. Here is the recipe:

Fill Freezer Bag with:

1 and 1/2 pounds chicken breasts, chopped
1/2 white onion, chopped
1 red bell pepper, chopped
1 cup black beans, drained
1 cup frozen corn, drained
4 oz. can green chilies
1 jalapeño, seeded and chopped
juice of two limes
3 cloves garlic, minced
1 cup cilantro, chopped
2 teaspoons cumin

To Cook: Place thawed contents in slow cooker and cook on low 7-8 hours or high for 4 hours. Serve on top of tortillas for tacos or serve on top of rice. Garnish with extra lime or cilantro if desired.

As you’ll notice, you’ll need a slow cooker for these meals if you wanna set it and forget it but you can whip these up the same way and cook them in a stock pot on the stove. Also, you can easily go with frozen or fresh ingredients depending on what you have access to and either way, you’re going to deliver a healthy delicious meal with literally no fuss.

I prefer to go with fresh ingredients for extra nutrients and we serve these with rice, tortillas, or alone and garnish with micro greens and fresh avocado. The flavor of this dish is nothing less than fresh and authentic Mexican cuisine. I could eat this every day!

As you look through and try your hand at each these recipes, you’ll see that there’s plenty of space to pair sides, change spices or increase heat PLUS you can change out your carb to make it fit within your family’s preferences. Don’t like rice? Serve the sausage dishes in hoagie rolls! Feeding an army? Double the recipe! Can’t eat pasta? Use “zoodles”! Vegetarian? Substitute chickpeas or tofu! No matter what your favorite dinner is, these 5 recipes are so versatile and family friendly that you just can’t go wrong…
